Eric Joder had been looking for a franchise opportunity when he stopped in at a Gandolfo's New York Deli in Salt Lake City. "I immediately loved the concept, the atmosphere and the food," Joder recalled. This relatively small, but quickly growing franchise was founded by Craig Gandolph, a deli owner from Long Island, N.Y., who moved to Utah in 1989 and began opening delis there. The chain went from 9 stores in 2002 to 22 stores in 2003, with a projected 61 delis open by the end of this year in states including Utah, Colorado, Idaho, North and South Carolina, Massachusetts, Montana, Nevada, Arizona and Washington. Don't try the deli if you have a hard time making decisions. Gandolfo's Bozeman location will offer 49 different sandwiches, a variety of salads, nine breakfast sandwiches and seven breakfast bagels, with names like the damned yankee, bronx barbecue and the Italian scallion. Their Web site says the delis feature "fresh-made hot and cold New York deli style sandwiches, pasta salads and desserts with a huge dose of Frank Sinatra music and Mets memorabilia." They also slice their own meats and cheeses. "The idea is to also be value-oriented," said Joder. "For instance, customers will be able to buy a half sandwich, drink and any one of our sides - chips, soups or pasta salads - for six or seven dollars." Joder is renovating the 1,750- square-foot University Square space next to Staples himself to include 41 seats. The building was previously occupied by the Paradise Hawaiian Grill. |
